Oh Fudge!

There is nothing I love more on vacations than running into a good chocolate shop and I am a sucker for the fudge section. Once I discovered I could make my own fudge, life changed for the better. However, it’s pretty rich so I don’t make it all the time, but it’s a great option when I want to bring something to a party and I don’t have a lot of time to prep.

Now I only make fudge with condensed milk, I don’t mix the sugar and milk myself. That is above what I can handle. Easy fudge however, is called that for a reason. It doesn’t take a lot to make. There’s so many different ways to be creative and add different flavours but I think for now we should start at the beginning. You can choose to use two cups of semi sweet chocolate chips, I personally like to add in milk chocolate chips so that’s what I have listed here.

Let’s take a look at the ingredients:

  • 1 and 1/2 cups semi sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1 can of condensed milk
  • 1 teaspoon vanilla

To start I put all the ingredients in a pot before I add heat, and the turn the stove on low. Low heat is important, if its too hot, the chocolate won’t melt evenly and you wont get that creamy texture. The next step is to stir consistently until all the chocolate chips have melted in. It does get a bit thick, be patient and continuously stir. The second all the chocolate chip lumps are gone, take off of the heat right away and spread on a cookie sheet. I can’t stress enough don’t leave it on heat when everything’s melted, even for a minute. It will wreck the texture. I usually put parchment paper down before I pour it on the cookie sheet doesn’t stick. Let it sit for a couple hours and your done. It you need to speed up the process you can put it in the fridge.

It doesnt take a lot of time or skill., maybe a little arm strength to stir. The end result tastes great, looks great and is always well received.
